Before the Holy Trinity (Carbonara, Amatriciana, Cacio e Pepe), there was Gricia! This ancient Roman recipe is widely considered the mother of Roman pasta dishes! It originated around 400AD and we love to bring back a classic recipe that might be a little forgotten by the masses! Top that on top of our burger patty that is seasoned like a classic meatball with sundried tomato and hot honey pesto, brushed bun, like a garlic knot, with garlic butter, parmiggiano, and parsley flakes!

WHAT'S ON IT

Grilled beef patty (seasoned like a classic meatball), Gricia sauce made with cream, rendered bacon fat, pecorino romano, cracked and toasted black pepper, topped with crispy bacon, sundried tomato and hot honey pesto, soft and toasted pub bun finished like a garlic knot with garlic butter, parmiggiano, and parsley flakes!
