Fried wings, tossed in an Amatriciana inspired sauce made of roasted red peppers, San Marzano tomatoes, sundried tomatoes, cooked down in rendered bacon fat, toasted black pepper, served with extra sauce in the middle to mimic a lava filled crater, drizzled black garlic aoili and bacon "lava rock" crunch.
